I'm thinking about what to do with this first Macbook. I've briefly used Elementary and it looks nice visually; but I wonder if it has lower compatibility with some software as a result of the push towards a unified visual identity? I have no basis for asking that, just curious.

They've been running stock Fedora/GNOME, but as most third-party software targets Ubuntu I tried that out. Ubuntu's reliance on Snap introduces a moderate performance penalty, so I'm leaning toward a switch to Debian testing with an Ubuntu chroot for the proprietary educational/videoconferencing software. The hardest part will be getting them off Minecraft and onto Minetest due to network effects.
