They couldn't physically do the work if they did. And the city populations were a huge market. The population was not anywhere near where you need the industrialised scale we have today.

Some of the foods in the Early American diet were wild game like deer, turkey, and fish. Vegetables like corn, beans, okra, and squash. Dairy products like milk, butter, and cheese. And grains like rice, wheat, oats, and barley.
